Ingredients

Basic Slow Grilled Ribs:
1 - 2 slabs pork back ribs or spareribs (estimate about 1 lb. uncooked ribs per serving)
Rub, as desired (see recipes below)
Sauce, as desired for basting, glazing and serving at table
Memphis Style Ribs:
2 Tablespoons garlic powder
2 Tablespoons onion powder
2 Tablespoons white pepper
2 Tablespoons seasoned pepper
2 Tablespoons chili powder
2 Tablespoons cumin
2 Tablespoons brown sugar
4 Tablespoons paprika
2 teaspoons cayenne pepper
1 - 2 cups apple cider, optional
2 teaspoons crushed red pepper, optional
Southern Comfort Ribs:
6 Tablespoons paprika
4 teaspoons garlic powder
4 teaspoons seasoned salt
2 teaspoons dry mustard
2 teaspoons oregano
1 teaspoon chili powder
barbecue sauce (optional)
2 Tablespoons spicy brown mustard (optional)
molasses or bourbon (optional)
Pacific Rim Ribs:
2 teaspoons five-spice powder
1 teaspoon ground black pepper
1 jar (7.25 - 8.5 oz.) hoisin sauce
3/4 cup honey
3/4 cup sherry
1/4 cup soy sauce
1 tablespoon fresh ginger root, grated
2 cloves garlic, crushed

Directions:

MEMPHIS STYLE RIBS:
Mix together, garlic powder, onion powder, white pepper, seasoned pepper, chili powder, cumin, brown sugar, paprika and cayenne pepper until well blended. Rub each slab of ribs with about 1/4 cup dry rub mixture. If desired, baste ribs 3 to 4 times during cooking time with apple cider to which you've added crushed red pepper.

SOUTHERN COMFORT RIBS:
Mix together, paprika, garlic powder, seasoned salt, dry mustard, oregano and chili powder until well blended. Rub each slab of ribs well with about 1/4 cup dry rub mixture. If desired, baste ribs towards end of cooking time with barbecue sauce to which you have stirred in spicy brown mustard and a little molasses or bourbon.

PACIFIC RIM RIBS:
Mix together, five-spice powder and ground black pepper until well blended. Rub each slab of ribs with 3 teaspoons dry rub mixture. Baste ribs towards end of cooking time with hoisin sauce mixed with honey, sherry, soy sauce, ginger root and garlic. ..................................................................................................................................

Grill over medium heat 15 - 20 minutes turning frequently for even cooking and basting as recipe directs.

Meal Solution Tip:
Serve with corn on the cob, creamy cole slaw, baked beans and a fresh fruit cup of melon, grapes and strawberries.
